British Sandwich Week for #Big7Tea.

This week is British sandwich week and to celebrate we wanted to share our team’s favourite sandwiches and what they will be eating at the #MoorfieldsTea event on Thursday 5 July as part of the nation-wide NHS #Big7Tea.

Each department has given their favourite British sandwich recipe for you to make at home, or as part of your own Moorfields Tea party if you will be joining us in celebrating the 70th anniversary of the NHS. Moorfields Eye Charity is joining up with other NHS charities to celebrate with people all around the country to honour this magnificent milestone. Our goal is to have at least 70 different Moorfields Tea parties hosted.  

To make it a bit more British we may have added some cheesy humour (pardon the pun)!


Egg- vents and Community – Egg Sandwich

Our Events and Community department love an egg sandwich, because it’s packed with protein to give us energy for our exciting challenges but it never cracks under pressure because we are hard boiled.   

To serve 8 people – Ingredients:

  • 3 hard-boiled eggs, cooled
  • 1-2 tbsp mayonnaise
  • 4-6 slices white bread
  • 2 tbsp softened butter cress, to serve


  1. Peel and finely chop the eggs, mix with mayonnaise and some seasoning.
  2. Cut into neat fingers and stack on to a plate and add cress to make it look pretty.


Finance and Data, 1 and 2, salsa sandwich  

Finance and data work closely together, and nothing gets them counting 1, 2, 3, 4 then a sizzling salsa, oven-toasted grilled cheese sandwich. Yum!

To serve 4 people – Ingredients:

  • 8 slices of thick bread
  • 3 tbsp mayonnaise
  • 3 tbsp salsa
  • 8 slices of the cheese of your choice


  1. Heat oven to 220c
  2. Spread bread slices with mayonnaise
  3. Place 4 bread slices, mayonnaise sides down, on baking sheet; spread with salsa. Cover with cheese and remaining bread slices, mayonnaise sides up.
  4. Bake for 12-13 minutes, and enjoy!


Major Gifts and Legacy - Green Hamburger sandwich

Major burger coming your way but with a touch of legacy when finding your roots with the best no bun hamburger recipe.

To serve 4 people – Ingredients:

  • 450G ground beef
  • 1 cup minced mushrooms
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • salt and pepper, to taste
  • 6 slices cheese
  • With all your favourite toppings
  • Butter Lettuce for the bun, but if you want a bun add one.


  1. Mix all patty ingredients in bowl. Form individual patties, then put on grill or cook in skillet for 5-8 minutes per side until desired doneness.
  2. Add lemon juice, let sit for 2 minutes prior to serving
  3. Add additional toppings as wanted
  4. Done!


Grants love the eggplants!

The grants team are always on the move looking for new research to support and essential equipment to buy for Moorfields. They will always stop and get egg-cited for an eggplant grill sandwich.

To serve 4 people – Ingredients:

  • 3 tsp extra-virgin olive
  • 2 tsp garlic cloves
  • Salt and pepper
  • 4 baguette rolls
  • 6 slices of mozzarella
  • 1 medium eggplant
  • 2 tomatoes
  • Basil leaves (optional)


  1. Heat a grill or grill pan to medium-high and oil hot grill. In a small bowl, combine garlic with 1 tablespoon oil; season with salt and pepper. Brush garlic oil on cut sides of bread and grill until lightly toasted on both sides, 1 to 2 minutes. Top bottom half with cheese.
  2. Brush eggplant with 1 tablespoon oil and season with salt and pepper. Grill until tender and lightly charred, 12 to 15 minutes, flipping once. Layer eggplant on cheese. Brush tomatoes with 1 tablespoon oil and season with salt and pepper. Grill until lightly charred, 2 to 3 minutes, flipping once. Layer tomatoes on eggplant, top with basil, and sandwich with top half of bread.
  3. Enjoy!


Individual Giving with an individual taste

Our Individual Giving department went for the classic BLT, but wanted to give it its own individual twist because in their team they make sure every individual is as special as the next. They would love to show you how to make the four grilled cheese BLT.

To serve 2 people – Ingredients:

  • 4 slices thick cut bacon
  • 4 slices bread
  • Softened butter, for grilling
  • 4 teaspoons dijon mustard
  • 1 large ripe tomato, cut into ½ inch slices
  • 4 different freshly grated sharp cheese (cheddar, mozzarella, brie and ricotta)
  • 2 small handfuls salad


  1. Line a baking sheet with foil and lightly coat with non-stick cooking spray. Lay the bacon on the prepared pan and cook in the oven until crisp, about 15 to 20 minutes. Transfer cooked bacon to a plate lined with paper towels and set aside.
  2. Warm one side of a slice of bread with butter. Spread the other side of the bread with 1 teaspoon of dijon mustard. Top with half the cheese, 2 strips of cooked bacon, sliced tomato, and salad. Spread one side of another slice of bread with 1 teaspoon of mustard, then place mustard-side down on top of the sandwich. Butter the outside of the top slice of bread. Repeat to make the second sandwich.
  3. Once the pan is warm, add the sandwiches to the pan. Cook until the bread is golden-brown in colour and the cheese has melted, about 3 to 5 minutes per side. Transfer to plate, cut in half, and serve. Yum!


The CEO goes avocado for a smashed chickpea & avocado salad sandwich!

Our Moorfields Eye Charity CEO loves avocado, and even more so when he has a busy day in the office. With its low calorie slow releasing energy boost to keep him going throughout the day, avocado also has vitamin A and zinc which could help with preventing macular degeneration and lower the risk for cataracts,  glaucoma, eye fatigue, flare and light sensitivity.

To serve 3-4 people – Ingredients:

  • 1 can chickpeas
  • 1 large ripe avocado
  • 1/4 cup fresh coriander, chopped
  • 2 tablespoons chopped spring onion
  • Juice from 1 lime
  • Salt and pepper, to taste
  • Bread of your choice
  • Fresh spinach leaves or other sandwich toppings: lettuce, tomato slices.


  1. Rinse and drain the chickpeas. Place on a paper towel and remove the outer skins. You can leave them on.
  2. In a medium bowl, using a fork or potato masher smash the chickpeas and avocado together. Add in coriander, spring onion, and lime juice. Season with salt and pepper, to taste.
  3. Spread salad on bread and top with your favourite sandwich toppings. You can also add fresh spinach leaves.
